Chicken in a Pot

Prep. Time: 15–30 minutes Cooking Time: 3½–10 hours Ideal slow-cooker size: 1½–3 qt.

2 carrots, sliced

½ cup diced or sliced onion

2 celery ribs, diced

1½ cups cut-up chicken

1 tsp. salt

½ tsp. dried basil

¼ cup water (may need ½ cup if cooking on High)

1. Place vegetables in bottom of slow cooker. Place chicken on top of vegetables. Add seasonings and water.

2. Cover. Cook on Low 8–10 hours, or High 3½–5 hours.

Makes 2 servings. Using skinless chicken thigh meat, each serving contains:
